Maggie, this is a terrific approach to stuffed peppers. I know I will love the sausage stuffing, particularly the spicy variety. This gets me thinking about trying chicken-based Italian-style sausages too. Thanks for sharing your aunt's tasty-sounding recipe.

here's my aunt's recipe that she makes for our family parties...a little different that it's made with Italian sausage and cheese in the stuffing. 4 red bell peppers 8 oz long grain rice, steamed 2 Italian sausages - mild or spicy removed from casing 1/2 cup onions, chopped 1/2 cup carrots, chopped 1/2 cup celery, chopped 4 cloves garlic, chopped 1/2 cup parsley, chopped Salt & pepper 1/2 cup Parmesan cheese, grated Olive oil Butter 1. steam the rice and set aside. 2. in a skillet, saute the onion, celery, carrots and garlic until translucent. 3. add the sausage and cook for about 5 minutes. 4. mix the sausage and vegetables with the rice, add the cheese and parsley, season with salt and pepper. 5. taste for seasoning, and stuff the peppers to the top. 6. arrange in a baking dish big enough to fit the peppers. Add olive oil and some butter and bake at 375F for about one hour. Serve with strained tomato sauce or with a salad.

Hi DJ! Until my experiment last night I'd never added cheese to my stuffed peppers and boy, was it good! I decided to try a southwestern approach and added a can of green chiles, diced tomatoes, some cumin, a bit of pure chile powder and grated cheese to the meat mix, then stuffed the peppers. Then, I added 3/4 cup of vegetable broth with some added diced tomatoes around the peppers to help them steam. My husband was raving about it!

Hey Star, your post on stuffed peppers bring back memories of my mom making & myself as well, when my children were little. Do you put a slice of cheddar cheese(from the block, of course)on top of the beef/rice stuffed pepper, then put it in oven until cheese melts/ Yum!

Star, I just had stuffed peppers the other night (haha). Later on that evening I read one of my new cookbooks that I got in the mail and they had a stuffed pepper recipe, but instead they were stuffed with mashed potatoes (i'm not sure what else was used). Let me know if you're interested.

I've got a real hankering for stuffed peppers and veggies the way my grandmother used to make them and, of course, given that she couldn't read or write, the recipe was always in her head. She used to stuff zucchini, eggplant and tomatoes, too, with her beef/rice mixture, served in a tomato-y sauce. Time to experiment!
