Violet, I don't think it makes any difference, oil or no oil. Sherrie's idea is the best, to freeze unused potions in small containers.

Would sun dried tomatoes last longer in the fridge if they weren't in oil? I mean say you have a jar of them, not in oil, they've been opened...how long would they last as opposed to having been open but packed in oil? Does the oil change anything to do with how long they will last? Just curious...

Thanks everyone for the information. I did check the expiration date and it is not until August 2008. I haven't tasted them yet but from looking at them, they still look fine. If when I go to make the shrimp recipe, I find out they are not any good I will just have to improvise with what I have on hand. -- Edited by 697115 at 12/29/2006 4:07 PM

I have to agree that pretty much anything packed in oil is only good a week or so after you've opened it. Refrigeration doesn't add anything to that time - it just makes it so that it's fresh for that first week or so. Sorry. Next time, however, you could try freezing any unused portion in small containers. That way you can just take out as much as you need and have no waste.

Sometimes it's hard to decipher what all the stamped numbers mean. Once the jar has been opened, I would saya week or two. My motto is - when in doubt, throw it out. I always thought that they only lasted a few weeks once opened even though there stored in the refrigerator. If a white mold appears on top, discard. Try a little taste first as it would be such a shame to waste a big expensive jar.
