Pork Loin Roast with Gravy for the slow cooker

This is probably my favorite slow cooker recipe for pork loin . It's really delicious. I served with homeade mashed potatoes, glazed Dijon carrots, and cresent rolls.The cooking time is right on-I was actually able to slice it , it didn't shred apart like so many other slow cooker pork loin recipes.It is in February 2009 's Simple &Delicious mag . A great home-style meal! 1 boneless whole pork loin roast (3 -4 pounds) 1-2 Tablespoons olive oil 1 can (14-1/2 ounces) chicken broth 1 cup julienned sweet red pepper 1/2 cup chopped onion 2 cloves garlic, minced 1/4 cup apple cider vinegar 2 Tablespoons Worcestershire sauce 1 Tablespoon brown sugar 2 teaspoons Italian seasoning 1 teaspoon salt 1 teaspoon pepper 1 bay leaf 4 teaspoons cornstarch -you might need to add a little more(I did), if you like a thicker gravy 4 teaspoons cold water hot prepared mashed potatoes Cut roast in half and brown on all sides in olive oil. Drain and transfer to a slow cooker. In a bowl, combine the broth, red pepper, onion, garlic, vinegar, Worcestershire sauce, brown sugar ,Italian seasoning, salt , pepper, and bay leaf. Pour over pork in slow cooker. Cover and cook on low for 3-4 hours , until a meat thermometer reads 165 and meat is tender. Remove pork and keep warm. For gravy, strain cooking juices and skim fat. Pour 2 cups into a saucepan . Combine cornstarch and cold water until smooth ;stir into cooking juices. Bring to a boil ; cook and stir for 2 minutes or until thickened. Slice pork and serve with hot mashed potatoes and gravy. This homestyle supper can be made a day ahead. Strain and skim the cooking juices, cover and store all in the fridge.
