Baked Mashed Potatoes 1 T butter
4 lbs. potatoes...russet probably work best (pealed, cut into 1-inch pieces)
1 C whole milk
1/2 C butter (melted)
1 1/2 C mozzarella cheese (grated)
1C parmesan cheese (grated-fresh is possiable)
S & P to taste
2-to-3 T plain dry bread crumbs
Preheat oven 400 dF
Coat 13 X 9 baking dish w\1 T butter (set aside)
Cook potatoes in lg. pot of boiling water (salted) until very tender (approx. 15 min's)
Drain, then return potatoes to pot and mash well
Mix in milk & melted butter
Mix in mozzarella and 3/4 C of the parmesan cheeses
Season to your taste with S & P
Transfer the potatoes to the prepared baking dish
Combine bread crumbs and remaining 1/4 C parmesan cheese in a sm. bowl; then sprinkle over mashed potatoes
Bake uncovered until topping is golden brown (approx. 20 min's)
P.S. Can be prepared ahead...covered and chilled for up to 6 hours before baking..........''for a quickie

....use instant mashed potatoes (or microwaveable mashed potatoes that come in the cooking bag), and follow rest of recipe''.
