I made this Saturday night for dinner and it was delicious! 12 uncooked manicotti shells 1 pound ground turkey-(I used a 20 ounce package of Jenni-O, 93%lean) 1 large onion, chopped 4 cloves garlic, minced 1 tablespoon Worcestershire sauce salt and pepper, to taste 1 jar (26 ounces) spaghetti sauce-I used Prego Heart Smart Traditional 1 can (14-1/2 ounces) diced tomatoes with their juice 1/4 cup dry red wine 2 teaspoons sugar 2 teaspoons Italian seasoning 1 teaspoon onion powder 1 teaspoon garlic powder 1 cup (4 ounces) shredded sharp cheddar cheese 1 cup (4 ounces) shredded Monterey Jack cheese 1 container (15 ounces) ricotta cheese 1/2 cup freshly grated Parmesan cheese, divided (I shredded mine) 1 egg 1/4 cup chopped fresh parsley Pinch each: salt, pepper, crushed red pepper flakes, and nutmeg Cook manicotti according to package directions (I undercook mine a little bit, they will cook in the oven too). Meanwhile in a large skillet, cook turkey, onion, and garlic over medium heat. Season with salt, pepper, and Worcestershire sauce. When turkey is no longer pink and vegetables are tender drain off the grease . Stir in the spaghetti sauce, tomatoes, red wine, sugar, Italian seasoning, onion powder and garlic powder. Bring to a boil; lower the heat and let it simmer, stirring occasionally, until you're ready for it. Meanwhile, in a large bowl, combine the cheddar, Monterey Jack, ricotta, 1/4 cup of the Parmesan, egg, parsley, salt , pepper, crushed red pepper flakes and nutmeg. Place 1 cup of the meat sauce into a greased 13-in. x 9-in. baking dish. Drain manicotti and let cool in a single layer on a foil-lined baking sheet to prevent sticking together. Stuff cheese mixture into manicotti shells. Place shells over meat sauce in the pan. Top with remaining meat sauce. Sprinkle with remaining Parmesan cheese. Cover and bake at 350 degrees for 35-40 minutes or until bubbly. Tip: I spray the foil that I cover the pan with , with no-stick spray so it doesn't stick to the top layer of cheese while baking.
