    Tortellini Toss

    This was great tasting, easy pasta dish. The seasonings work together so nicely! This is a keeper for me.


    1 package (20 ounces) refrigerated cheese tortellini (frozen is o.k. too)
    1 small onion or a few shallots, chopped-I like shallots for this
    2 garlic cloves minced
    1/4 cup butter, cubed
    1 tablespoon olive oil
    1-1/2 pounds boneless skinless chicken breasts or pork tenderloin, cut into 3 inch strips
    1 teaspoon salt
    1 teaspoon dried basil
    1/2 teaspoon lemon-pepper seasoning
    1/4 teaspoon dried marjoram
    1 package (14-16 ounces) frozen sugar snap peas or vegetable of choice, partially thawed- I chose to use California Blend(broccoli, cauliflower and carrot)
    1/2 cup grated Parmesan cheese

    Cook tortellini according to package directions. Meanwhile, in a large skillet, saute onion (or shallot )and garlic in butter and olive oil until tender. Add meat and seasonings; cook and stir for 5-7 minutes or until meat is no longer pink. Add vegetables; reduce heat. Cover and simmer for 5 minutes or until heated through.
    Drain tortellini . Add to meat mixture , add some of the grated Parmesan and toss to coat. Sprinkle with remaining Parmesan and serve.
    Isprinkled some fresh minced parsley on top. This was delicious.I served it with garlic cheese Texas toast.
