Made a thin jelly roll cake and used that as the seaweed. Added slices of fruit to look like the fish in the maki rolls. Served it with a bowl of chocolate sauce as soy and green tea ice cream to look like wasabi. Didn't do anything to look like the ginger but all in all it was very effective. VERY clever!!! I wish you'd have taken pictures, too! I'd love to see this.

I've used the jasmine rice pudding to make dessert sushi...it was very cool... Made a thin jelly roll cake and used that as the seaweed. Added slices of fruit to look like the fish in the maki rolls. I love rice pudding! I've always made it with plain white rice though. Not very creative. The vanilla sauce I put over the top is what makes it for me though. My husband and kids aren't real big on it so I haven't made it in a long time. I'll try to dig up and post my recipe soon.

I once made rice pudding with Jasmine rice and coconut milk. Added some mango and served it with a kind of burnt sugar sauce...it was amazing! In general, Jasmine rice adds really yummy flavor to rice pudding...if you like it at all, it's worth trying and the substitution is dead on.
