yummmmmmmmO, I love peanut butter cookies (well, actually, I never met a peanut butter thingy I didn't like). I have loved wafer cookies since I was a child and I just discovered a new one......Sugar Free Peanut Butter Wafer Cookies. They are also reduced fats (zero trans fats)...Made w\real peanut butter. P.S. I went over and had a look-see.....yum yum yum, tell him they look wonderful. My son made peanut butter cookies tonight..they were YUMMY. I posted a pic of the finished product. He had the recipe from home ec when he was in 7th grade. Preheat oven to 375 degrees In a small bowl combine: 1 1/2 cups of flour 3/4 teaspoon baking soda 1/8 teaspoon salt In a large bowl combine and beat until creamy: 1 stick butter, softened 1/2 cup sugar 1/2 cup packed brown sugar 1 tablespoon vanilla Add 1 egg to butter mixture and Gradually add flour mixture to butter mixture and beat. Stir in 1/2 cup crunchy peanut butter. Roll dough into 1 inch balls: place 2 inches apart on ungreased cookie sheet. Press each dough ball flat with a fork. Bake 10-12 minutes. REmove cookies immediately with a turner or onto a wire cooling rack. Allow to cool before bagging or eating. Eat and enjoy!
