YUM....I love Kielbasa, but have not had the turkey! It would work with beef too, right? Sounds like a quick-n-easy meal! JUST what we need to feed the 6 people at The DJ Homestead! AND sounds like comfort food to boot!

This was a simple dinner we had when I was growing up. 1 tablespoon olive oil 1 tablespoon butter 3 medium Yukon gold potatoes, diced fresh cracked pepper and salt 1/2 medium onion chopped 1 pound turkey kielbasa, sliced 1/4 in thick In a skillet heat olive oil and butter over medium heat. Once butter has melted add potatoes. Sprinkle with salt and pepper. Allow to cook for 4-5 minutes without stirring. Stir after 5 minutes. Cook another 5 minutes. Stir in onions. Cook 3 - 5 minutes. Stir in kielbasa. Continue cooking for 5 more minutes or until sausage is warmed through and pieces begin to brown. If you use another sausage cut the amount of butter and oil slightly or the dish may turn out a little greasy. for color you can add some colored peppers with the onion. Precooked potatoes work, boiled or left over baked. Italian variation use cooked Italian sausage, add a little Parmesan cheese before serving. Cooked breakfast sausage works. I precook cook it, drain it and crumble it up. If you want to get fancy, divide into 4-6 heat proof bowls top with some cheese and put under broiler until it melts, top with some scrambled eggs. -- Edited by 2598976 at Jan 7, 2010 7:50 PM CST
