It should work, you may have to thin it out a little with some extra milk to get it to spread for pancakes.

These sound great! I always put some apple pie spice (cinnamon, nutmeg, and cloves) in my pancakes and waffles - I bet if I did that with these they'd taste like oatmeal cookies! Yummy! -- Lisa

3/4 cup old fashioned oats 3 Tbsp. butter 1 Tbsp. sugar 1 1/4 cups flour (or substitute 1/2 cup of flour for whole wheat) 1 tsp. baking soda 1 1/2 tsp. baking powder 1/2 tsp. salt 2 eggs 1 cup milk or butter milk Cook oats with 1 cup water or milk. Turn off heat. Stir in butter till melted. In a separate bowl, sift flour, sugar, powder, soda, and salt. Combine eggs and milk. Add cooled oatmeal. Mix with dry ingredients till blended. Cook waffles. They are great with a good jam.
