YUM!:-
4 pounds bone-in chicken pieces, skin removed-(I used bone-in breasts)
olive oil
1/3 cup chopped onion
2 cloves garlic, minced
3 tablespoons butter
3/4 cup ketchup
1/2 cup hot water
1/3 cup cider vinegar
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons prepared mustard
1/4 teaspoon salt
1/8 teaspoon pepper
Heat a small amount of oil in a large skillet; brown chicken in batches. Drain chicken on paper towels.
Meanwhile, in a small saucepan, saute onion and garlic in butter until tender; stir in the remaining ingredients. Simmer, uncovered for 15 minutes.
Place chicken in a baking dish sprayed with Pam. Pour barbecue sauce over chicken. Bake, uncovered, at 350 for 45-60 minutes or until chicken juices run clear, basting occasionally.
Great with mashed potatoes!
