Cin, I don't think wheat germ would work. Flax is a unique seed. If you can't find it in a supermarket look for flax flour , or try a health food store. The stores here have a section with Bob's Red Mill products and I find it there. They also have a web site you can order from or have a friend in a bigger city send you some. I put it, millet, sunflower seeds and oats in the food processor, grind for a few min. and add it to my bread dough.

Scott, I can't find the 'flax seed'....but I do already have Wheat Germ, can I use this instead?? Or is there a lot of difference in the two??? -- Cin(\0/) God is so big He can cover the whole world with his Love ~~~~and so small He can curl up inside your heart~~~~

Ooh just a tablespoon for each egg, that's cool. How do you grind it to the right consistency? In the food processor? I so rarely use mine, can you tell?  My daughter can't eat eggs so this would be a wonderful alternative. I will try it especially since flax is so good for you. How do you know when it's ready to use, does it have to sit for a while to dissolve or do you just mix it up and when it feels/looks like egg just go for it? -- Worries go down better with soup. ~Jewish Proverb -- Edited by MommyMo at Oct 18, 2009 11:54 AM CDT

This was sent to me by a friend that can't eat eggs. It looks interesting. I'm going to try it in the next batch of cookies. Eggs are a great binder and leavener, but they're also high in cholesterol. For each replaced egg, grind a tablespoon of flax seed and dissolve it in 3 tablespoons of water. When it breaks down, it will have the same gooey consistency as an egg, and possess the same binding power. It's also a shot of nutritional goodness, as flax seed is a good source of essential fatty acids.
