I take leftover roast, and shred it. Add 2/3 cup of forzen potatoes (or leftover potatoes cubes), 1/3 cup frozen green peas (or leftover ones) an egg, and frozen pie crust and make an empanda. Mix meat, veggies, and egg together. Lay one pie crust on a baking sheet, spoon meat/ veggie mixture on it and top with other pie crust. (I do reserve some of the egg white to brush over the crust)..seal edges with a fork...cut some slits in and bake until golden brown.

Pretty much anything that was a good meal the first time, becomes a great new meal if you turn it into a simple stir fry type dish. Heat it up, maybe add a new ingredient or two and serve over rice. Any other tricks you can think of to make an old leftover new again and not make your family groan?

For leftover roast (or corned) beef, I like Roast Beef Hash. For leftover chicken, I like to make Dorito Mexican Chicken or Chicken tortilla soup (there are many recipes posted on Campbell's for this). Leftover chili becomes chili spaghetti, chili dogs or burgers, or just eaten as it is since it's better the second day. If we have leftover salmon from a meal I like to fold it into cooked pasta or add some mayo and make a spread for crackers. Leftover ground beef gets used in nachos, spaghetti, or taco salad. -- Lisa

Leftover chili-Chili spaghetti,chili fries, chili dogs, chili cheese baked potatoes. Leftover pot roast-shredded french dips or bbq beef or vegetable beef soup Leftover spaghetti sauce and meatballs-meatball subs,meatball french bread pizza Leftover corned beef-corned beef hash Leftover turkey-Turkey Dumpling Stew , Turkey & Cheese Toasted Subs, Turkey ala King Leftover ham-Denver omlettes, ham & pineapple pizza, ham pasta, ham ravioli casserole, ham & swiss cheese sandwiches -- Go Colts!!!!!!!!!!!!!!!

Leftover turkey - turkey soup and turkey pie or my family's favourite - Turkey Rice Casserole 1 can cream of chicken soup 1 can water 1/4 tsp. salt 1/2 cup rice (not instant) 1/2 cup diced celery 1 medium onion, sliced 1 1/2 cups cooked diced turkey (or chicken) 3 medium carrots, diced 1 green pepper, diced Empty soup into large bowl, mix in water thoroughly, a small amount at a time. Add salt. Combine with remaining ingredients. Put into buttered baking dish. Cover and bake in a 350 degree oven for 45 minutes or until rice and vegetables are cooked. -- Carol B.

What are some of the things you make with leftovers? What are some of your families favorite dishes that you make using leftovers? Leftover chili = chili pie. Spray baking dish with cooking spray. Put down some fritos, then chili, top with cheese and then mix up a box of jiffy cornbread muffin mix and pour over the top. Bake until cornbread is done. Leftover chicken= chicken salad cube chicken and mix with some mayo. My kiddos love it with pickles, apples, and grapes(or raisins). So how do you makeover leftovers?
