First: EVOO is Extra Virgin Olive Oil.  EVOO for short. Second: wow what an interesting combination of flavors. I would have never thought to use a soup as a moistening agent for creating a crust. Great tip! I will have to look for these V8 soups; I haven't seen them on shelves yet but I will admit I haven't been looking, either. -- Lisa

Thank you! Yes, the EVOO worked well, although I did have to keep replenishing it, since the chops were quite thin, they were only two minutes a side. Hope you enjoy.

Hello Carla, and welcome! You've definitely come up with a creative recipe - although they're not ingredients I'd necessarily have thought to put together, I an see how that sweet/spicy combination could work very well with pork chops. Did the EVOO work well in that screaming hot pan? I think I'd be more likely to try it with regular olive oil or an oil with a higher smoking point - although I do love using extra virgin oil when I can, for its flavour. I saw a commercial for the new V8 soups just the other day - thanks for a fresh idea of how to give one a try! • Janet

Want to fancy up boneless pork chops with minimal effort? Well, here's the way... --1 lb. boneless pork loin chops --1 carton Campbell's V8 Butternut Squash Soup --2 cups Whole Wheat Pancake Mix --Sweet Desert Wine, preferably blackberry (but, if you can't find that, any will do) --1 sweet onion --chicken stock --rosemary --cilantro --red pepper flakes (go LIGHT on these; a little goes a long way) --Morton's Nature's Seasoning --EVOO Make a station. First, half of the pancake mix. Then, the soup. Then the other half of the pancake mix. Mix the rosemary, cilantro, red pepper flakes and Nature's Seasoning in a cup; squeeze to break up and mix with your fingers. Sprinkle over chops on both sides. Dredge chops first in pancake mix, then soup, then pancake mix again. Drop into a screaming hot pan with olive oil. Be sure to flip carefully, and only ONCE, as the crust is delicate. After chops are done, remove ALL leftover oil from pan, to make sure there isn't a burnt or greasy taste, and splash in some wine. Splash in some chicken stock as well. Toss in onion and cook until onion has absorbed all of the liquid. (They'll be this pretty purple and SO sweet...) Throw over chops.
