I also Love Homemade pot pies.....good recipes girls. THIS WAS ANOTHER GOOD ONE TO GIVE A ''BUMP-UP'' AND.....down below are a couple others that would be good bumped up I think!!!!!!!!!! but you can find them easily enough. --P.S.S. by Sherrie: Sometimes when I make quickie pot pies like this, I use a flour tortilla as a "top". Put the filling in a ramekin and then put the tortilla over it, spray with a little cooking spray and bake. Voila! --also CD's: Beef Stroganoff Pot Pie sounds great too... these are all in the search: pot pies -- Edited by 2932550 at 08/28/2008 1:34 PM PDT

Both of these recipes look YUMMY. Chicken pot pie is one that at least my kids will eat as well and it gets some of their veggies in. -- ~*~Angela~*~

Easy to Prepare Chicken Pot Pie 1 bag of favorite frozen vegetables 1 2pk of refrigerated pie crusts 2 cans cream of chicken soup 1 cup left over chicken or 1 lb. boneless skinless breasts cooked and diced(My fav. is left over rotisserie chicken) Mix veg. and left over meat in cream of chicken soup Preheat oven to temp. as directed on pie crusts Take bottom pie crust and put into pie plate. Pour veg. and meat mixture in pie shell. Take last pie crust to make top. Place it over the filling. Take a fork and crimp the edges to mold the two crusts together. Poke small holes in the top with a fork. Take aluminum foil and cover the edges of the pie crust, so it will not over cook the edges. Cook on 350 degrees for approx. 30 minutes or until the pot pie is hot and crust is golden brown. This can also be made vegetarian by leaving out chicken and cream of chicken soup and substituting cream of mushroom and dicing Portabello mushrooms and adding them to the veg. instead of meat. To avoid spill over, you may want to bake pot pie on top of a baking sheet.
