Fresh Corn Confetti Salad

Kernels from 3 large ears of sweet corn (Position the knife blade right at the base of the kernel, so you get the whole kernels out in one go without causing the corn to bleed too much juice which will cause the salad to be too watery. If your corn is bleeding a lot, dump into a strainer and let drain for a few min.) Half a medium red onion, cut into small dice roughly the size of the corn kernels One serrano pepper, seeded and very finely diced (optional) One medium red bell pepper, seeded and cut into small dice roughly the size of the onion 1 shredded carrot 2 ounces of smoked aged cheddar cheese, cut into small dice roughly the size of the corn (If you like cheese add a little more) 1/4 cup finely chopped fresh cilantro leaves (parsley works but I like the cilantro best) 2 tablespoons of extra-virgin olive oil (I use more like 3) 1 teaspoon paprika Juice of one lime (lemons work but the green taste of the lime works the best) 1/2 teaspoon salt, or to taste Prepare all the solid ingredients and keep them chilled in a mixing bowl. Just before serving, add the olive oil, lime juice, salt, and paprika, toss. Adjust the tartness, sweetness and saltiness to suit your taste. Other semi-soft cheeses such as Gouda, Jack, Mozzarella, or Fontana work as well; just be sure to use the smoked kind. This can be made with roasted, that has cooled. Add some crumbled bacon and use non smoked cheese. I have made it with frozen corn, and it was ok for winter but we have fresh corn now.
