This is awesome. I must make this soon -- I haven't had peanut brittle in years and I have never made it myself.

This is the recipe I use. If you undercook it, it will stick to your teeth. If you overcook it it gets very brown very fast and will set up in the bowl instead of in the pan. It's a great recipe once you know your microwave and can jot down the *exact* time needed for perfect results. Trying it in a new microwave without paying attention to the time can yield terrible results.

Have had a few send some feedback on this one.....they said their husbands liked this recipe because it didn't stick to their teeth.
One said it was soooo quick and easy.

This is a ''Candy Recipe Exchange'' from a friend....a true 'Timesaver'. She says it is easy and good. I have not tried it yet as I need to buy some 'raw' peanuts.....have everything else in the pantry. Cin(\0/)

    Microwave Peanut Brittle

    1 cup sugar
    1 cup "raw" peanuts
    1/2 cup light corn syrup
    1/8 tsp salt

Microwave on high, these ingredients in a GLASS microwaveable bowl for 3 min. No need to stir initially due to consistency and stickiness.
After 3 minutes, remove, stir thoroughly and cook another 3 min.
Add - 1 TBSP of Butter (or margarine) and microwave another 2 min.

Remove and add 1 tsp of vanilla and 1 tsp baking soda. Whip quickly into light and airy mixture.

Have a cookie pan lightly coated with butter and dump the whipped mixture immediately on the pan and spread out to a thin layer (a plastic or rubber spatula works the best).

Immediately place cooking bowl in the sink and fill with water immediately. This will allow for a quick clean up. Let bowl sit for 30 min. or less and mixture in the bowl will dissolve.

After Brittle hardens, (30 min. or so), break into pieces.
Enjoy and Best Regards, Brenda S. Morton
