I guess we will need to try this now.. adding it to the list! BE SURE TO COME BACK ON HERE AND LET US KNOW HOW HE (THE FAMILY) LIKED IT. HERE IS ANOTHER WAY TO DO IT THAT HE MAY LIKE TOO. FRUIT COCKTAIL CAKE 1-1/2 cups sugar 2 cups all-purpose flour 2 eggs 1 teaspoon vanilla extract 2 tablespoons lemon juice 2 teaspoons baking soda 3/4 teaspoon salt 1 can (16 ounces) fruit cocktail with syrup TOPPING: 1/2 cup packed brown sugar 1/2 cup flaked coconut SAUCE: 1/4 cup evaporated milk 3/4 cup sugar 1 teaspoon vanilla extract 1/2 cup butter, cubed 1/2 cup flaked coconut 1/2 cup chopped walnuts (or pecans) In a large bowl, combine all cake ingredients; mix well. Pour into a 13-in. x 9-in. pan and sprinkle with topping ingredients. Bake at 350° for 35-40 minutes. Meanwhile, combine all sauce ingredients in a medium saucepan and bring to a boil. When cake is done and still warm, pour sauce over cake. Cool to room temperature. Yield: 15 servings. AND REMEMBER......I USE SPLENDA INSTEAD OF SUGAR IN MY RECIPES, YOU CAN MAKE THIS SUB. I just read the ingredients of the cake to my son who is home from college.. his comment.. wow.. sounds great.. he LOVES fruit cocktail.. in fact I just brought many cans of it to take back to college with him. I guess we will need to try this now.. adding it to the list!

While I have to admit the idea of a fruit cocktail cake doesn't appeal to me personally, I have giggled at this exchange. I am not a fan of fruitcake, or even of fruit and cake with the exception of pineapple upside-down cake and strawberry shortcake. I'm feeling a little mushy today myself though and wanted to take the opportunity to appreciate how we can exchange recipes and ideas here. -- Lisa

Oh....well, mine has never been mushy. Moist cake but nothing boardering mushy. Guess you've just never had a ''good one'' Sometimes I don't put any icing on it (mainly because I'm not an icing lover...I like it warm from the oven with butter on it).......my Hubby is the icing eater in the family, he like to have the icing\frosting on a cake about as thick as the cake.....that's why he likes the layered cakes. Frosting between every layer. He loves the 4-layer coconut cake w\frosting, then covered w\coconut flakes. -- Cin(\0/) You can complain because roses have thorns, or you can rejoice because thorns have roses

DJ...what in the world did she do to it that turned you off?? Too moist....too dry....you don't like fruit cocktail....too much icing....not enough icing..???? I do not like fruit cocktail, my Hubby loves it...... but I do love this cake. To me, I make it for him instead of the traditional ''Holiday Fruit Cakes'' which he loves and I hate them.....but I can eat this flaky moist cake instead..........DOES THIS NOT LOOK DELISH!!!!. Thinking about maybe making this cake for either Thanksgiving or Christmas.. Fruit Cocktail Cake and a Great Icing for it 2 cups unbleached flour 1 1/2 cups sugar 2 teaspoons baking soda 1/8 teaspoon salt 2 large eggs 1 (15 ounce) can fruit cocktail, undrained 1 teaspoon vanilla extract In a large bowl, stir together flour, sugar, baking soda and salt. Add eggs, fruit cocktail and vanilla and mix all ingredients well (by hand, do not use electric mixer); batter will seem very thick at first (if you use good fruit cocktail that has mostly fruit, not all juice), but this is the way it should be (the juice in the fruit cocktail is the only liquid in this recipe except, of course, the eggs). Pour into a greased 9 inch x 13 inch pan. Bake at 350°F for about 30 minutes or until toothpick inserted near center comes out clean. SERVES 12 This cake is best with Fruit Cocktail Cake Icing A Great Fruit Cocktail Cake Icing Made a couple of changes to this recipe, increased the butter from 3/4 to 1 cup, changed the milk from canned evaporated milk (which you can use either) to regular whole milk, and decreased the amount of milk from 1 cup to 3/4 cup [the additional 1/4 cup butter makes up the difference]...delicious topping. 1 1/2 cups sugar 1 cup butter 1/2 cup pecans 1/2 cup coconut 3/4 cup whole milk Mix sugar, butter, and milk in a heavy saucepan (2 quarts or larger) and bring to a boil over medium heat, stirring constantly, then boil for 5 minutes while you continue to stir. Remove from heat and add pecans and coconut, then immediately pour hot mixture over cake (cooled or uncooled). The frosting will be thin, so the liquid can be absorbed by the cake; only the coconut, nuts and a thin glaze will be left on top of the cake; the rest will soak into the cake. This will become the only frosting you will want to use over your Fruit Cocktail Cake -- Cin(\0/) God is so big He can cover the whole world with his Love ~~~~and so small He can curl up inside your heart~~~~
