LOL Momof3. My mouth waters when this thread comes up too. I love these cookies so much! Cin, I'm glad you can adapt the recipe so you can eat some, and even gladder that you share your adaptations! Thanks! I am not a fan of white chocolate but I bet the cranberries are an excellent change. Jennifer, I eat them for breakfast too. They have oatmeal, eggs, ... that means they're good for you doesn't it? Hahaha. -- Lisa

DRAINED THEIR JUICE OFF INTO A SMALL STOCK POT THEN ADDED CORNSTARCH, SPLENDA BR SUGAR, SPLENDA, BUTTER, CINNAMOM, FRESHLY-ZESTED NUTMEG, RUM-EXTRACT.....BRINING IT TO A FULL BOIL (STIRRING CONSTANTLY) THEN SIMMERING IT ON LOW UNTIL IT GOT AS THICK AS I WANTED. I DE-SEEDED THE PLUMS AND STIRRED INTO MY THICKENED SAUCE, ADDED A CAN OF CHERRY PIE FILLING (along w\a hand full of dried cherries) AND SOME CANDIED GINGER CHIPS....FOLDED ALTOGETHER AND PUT IN A PIE SHELL, DOTTED WITH SOME BUTTER AND SPRINKLED TOP WITH VANILLA-SUGAR THEN PUT A PIE SHELL ON TOP SPRINKLED RAW SUGAR ON TOP...PUT A FEW VENT-SLITS IN THE TOP AND BAKED IN A 400 dF OVEN FOR 15 min's THEN TURNED OVEN DOWN TO 350 dF FOR ANOTHER 25 min's (WITH THE OUTER CRUST COVERED). SERVED HOT WITH VANILLA ICE CREAM.....TURNED OUT TO BE ONE OF THE BEST PIES. THE HUBBY LLLLLLLLLOVED IT!!! -- ><(((*>Cin(\0/)<*)))><

I love the ones with cranberries too, I add white chocolate chips when I add cranberries. I need to make some oatmeal raisin cookies. Lisa....I left out the raisins too. Substituted dried cranberries and cherries (was out of raisins at the time). Loved the change. Then I used brSugarSplenda for the brown sugar and Splenda for the sugar. I like dessert too, so fix desserts in a way I can have some. -- ><(((*>Cin(\0/)<*)))><

Hehe - I neglected to mention that I left the raisins out completely so they were really oatmeal chocolate chip cookies. No one in our house is a fan of cooked raisins. I bet they are pretty with a powdered sugar glaze! I think they are definitely sweet enough as they are without icing them, though, too. -- Lisa

Oatmeal raisin cookies are the BEST. Last time I made oatmeal raisin cookies I iced them with a simple icing. Confectioners sugar mixed with water and then drizzled it on. My kids loved it.. I thought it was a little too sweet. However, it was pretty. I think that would be a great cookie in a cookie exchange!

I made these yesterday. I doubled the recipe, added a small amount of ground cloves and nutmeg to augment the spice flavor, and used 12 oz of semi-sweet chocolate chips. They. Are. Delicious. I got about 8 dozen cookies, of which I put 5 dozen in the freezer. The rest are almost gone already. -- Lisa

I *love* this cookie recipe. I make them with chocolate chips instead of raisins and they certainly do vanish! I even put some in the freezer to keep them from disappearing so quickly, but by the time I get back to the bag there are quite a few less than I remember putting in there! LOL -- Lisa

You're welcome , Bogiemom! I'm sorry......I forgot to add how much they are supposed to yield. I got 3-1/2 dozen cookies, so like around 42 cookies. Your cookies must have been big! Wow! These cookies are awesome! The name suits them! My 3 year old is devouring them! Jennifer, I know you'll appreciate this. I tried to make 24 cookies. Needless to say, 24 isn't enough, because you end up with 3 inch cookies, and a few 5 inch cookies!! Thanks again for the recipe!
